1. Промойте рис, погрузите
чистый рис в сотейник с толстым дном и налейте
двухсотграмовым стаканом охлаждённой чистой воды. Прикройте
крышкой. Когда вода закипит, варите еще 15 минут на медленном огне. Уберите сотейник с электроплиты
и дайте настояться 10 мин. Крышку не снимайте! Потом
положте рис в другую посуду, добавьте состав из уксуса, сахара и соли и помешайте деревянной ложкой динамичными режущими движениями,
помахивая крышкой над рисом, чтобы выпарился уксус.
2. Креветки необходимо разморозить, погрузив их в водичку - так они останутся
сочными. Осторожно очистить, оставляя хвосты, аккуратно разрезать вдоль по внутренней (вогнутой) стороне и "распластать".
Рыбу порезать на ровные квадратики. Филе рыбы разложить на доске. Резать тоненькими
кусочками, держа нож наискосок. Щупальце осьминога сначала нужно отбить, чтобы стало мягким, затем отварить 10 минут в воде. Охладить и порезать тоже косо.
3. Опустите руки в мисочку с подкисленной водой и скатайте рис в маленькие шарики (диаметром 2-2,5 см) или колбаски, плотно сжимая их, для лучшего склеивания.
Держа шарик (колбаску) "суши" в левой руке, указательным пальцем руки положите на него немного васаби, затем кусмачи рыбы, осьминога, кальмара, гребешка, краба или отварные
креветки и осторожно сожмите в руках, чтобы придать форму. Кусочек рыбного филе, который вы положите на рис, должен быть по размеру немного больше. Можно порезать водоросли nori на длинные полоски
(шириной 0,5 см) и обернуть вокруг [url=http://www.robot-sushi.ru/]суши[/url], скрепив концы водорослей, намочив водой.
4. Подавайте на прямоугольном блюде, сбоку выложив маринованный имбирь и хрен-пасту wasabi, в отдельную тарелочку налейте соевый соус.

На 20 порций: 150 гр. риса для суши, 200 гр. воды, 2 ст.ложки рисового уксуса, 1 ст.ложка сахара, 1 ч.ложка соли, маринованный имбирь, паста васаби
(зеленый соус из хрена васаби), соевый соус, 200 гр.филе рыбы (тунец, окунь, сельдь, макрель, скумбрия, лакедра желтохвост., угорь) или креветки или щупальце
осьминога или кальмар или гребешок или мясо краба.
